Quick and Easy Breakfasts

Breakfast is the most important meal of the day and to get over the boredom of cereal during the week, try these when you have more time.

These special caramel rolls at http://www.reciperewards.com/recipe/overnight_caramel_rolls.html are relatively simple. All the hard work is done at night and baking is done in the morning. First, break one loaf of thawed frozen bread dough into walnut size pieces. Arrange dough into a greased Bundt pan. Sprinkle one package dry butterscotch pudding, (not instant), one teaspoon cinnamon and one-half cup brown sugar. Drizzle with one-quarter cup melted butter over dough. Let stand in refrigerator overnight, at least eight hours. In the morning, bake in a preheated 350 degree oven for 20 to 25 minutes.

Or you can try this breakfast casserole found at http://southernfood.about.com/od/breakfastcasserolerecipes/r/bl90911r.htm. Just brown and drain one pound of bulk sausage. Then toast six slices of bread, removing the crusts beforehand. Cut each slice into four pieces. Beat six eggs, two cups milk, one-half teaspoon dry mustard, one-quarter teaspoon salt, and one-eight teaspoon pepper together. In a buttered casserole, layer half the toast, half sausage, and sprinkle one-half cup shredded cheddar or Monterey Jack cheese. Pour half egg mixture over layer, then repeat. Cover and refrigerate overnight. Bake, covered, in a preheated 325 degree oven for 45 to 60 minute. Let stand for five minutes.

Enjoy your breakfast on the run with mini-frittatas at http://kidscooking.about.com/od/breakfastrecipes/r/mini_frittatas.htm. Just preheat oven to 350 degrees. Spray a mini-muffin tin with cooking spray. Beat six eggs, one-third cup milk, one-half teaspoon kosher salt, one-quarter teaspoon pepper and parsley. Stir in one-quarter cup chopped turkey pepperoni. Divide three-quarter cup shredded cheddar cheese between cups and divide egg mixture between cups, filling to the top. Bake 10 to 14 minutes until puffed and a nice rich brown. Let your frittatas cool for five minutes.
