We all want our kids to eat better, especially when it comes to snacking. Here are some ideas, and you can even get the kids to help!
The first recipe is fruit and yogurt muffins found at http://allrecipes.com/Recipe/Jackys-Fruit-and-Yogurt-Muffins/Detail.aspx. Just preheat the oven to 350 degrees. Grease muffin cups or use paper muffin liners. Stir together two cups flour, one cup sugar, one teaspoon baking powder and one teaspoon baking soda. In another bowl, combine one eight ounce blueberry yogurt, an egg, one teaspoon vanilla and four tablespoons melted butter. Fold in two cups blueberries. Don't worry, the batter will be thick. Divide into muffin cups and bake for 25 minutes. Your kid will think he or she is really special if you whip them up these treats!
You can make this one, and with a name like Monkey Crunch (found at http://www.healthy-kids-snacks.com/recipes/monkey-crunch) what kid wouldn't eat it? Just mix six cups popcorn, one cup banana chips, two cups dry-roasted peanuts and one cup dried cranberries in a large bowl. This should make five servings. Yum!
Or this one, found at http://www.recipezaar.com/Ants-on-a-log-35277, will be a winner with your kids. You just need four ribs of celery, four tablespoons peanut butter and a small bag of raisins. Spread one tablespoon peanut butter on each celery, then divide raisins among the celery. All of these are easy enough for kids to make for themselves! Plus, they all sound good enough for adults to eat, too!
