Gorgonzola & Walnut Napoleon Bites

For this recipe you will need: half of a 17.3 ounce package Pepperidge Farm Puff Pastry Sheets (1 sheet), 1 egg, 1 tablespoon water, 4 oz. Gorgonzola Cheese and 1 package (3 ounces) cream cheese, softened. You will also need 1/3 cup walnuts, toasted and chopped, 2 tablespoons minced sun-dried tomatoes, 1 tablespoon chopped fresh parsley and cracked black pepper.

You will first need to thaw the pastry sheet at room temperature for 40 minutes or until it is easy to handle. Heat the oven to 375 degrees F. Lightly grease or line a baking sheet with parchment paper. Stir the egg and water with a fork in a small bowl. Unfold the pastry sheet on a lightly floured surface. Roll the sheet to a 12-inch square. Cut the pastry into 24 (2 x 2 inch) squares. Place on the prepared sheet. Brush with the egg mixture. Bake for 10 minutes or until golden. Let cool for 5 minutes on the baking sheet. Split each pastry square into 2 layers. Beat the Gorgonzola cheese, cream cheese, walnuts, tomatoes, parsley and black pepper to taste in a small bowl until the ingredients are mixed. Spoon 1 teaspoon of the cheese mixture onto 24 of the bottom layers and top with the remaining 24 to layers. Bake for five minutes or until the filling is hot and serve immediately.

This recipe is great for a cocktail party, birthday dinner or an afternoon snack. Gorgonzola goes well with a full-bodied red wine, so try a Cabernet to bring out the flavor of the cheese.
