S'Mores Cake


2/3 cup sifted flour
2 1/2 tsp. baking powder
1/2 tsp. salt
1 2/3 cups graham-cracker crumbs
1/2 cup butter/margarine
3/4 cup sugar
1 whole large egg
2 large eggs (separated)
1 tsp. vanilla
3/4 cup milk
1 3/4 cups chocolate-flavored ready-to-spread frosting
1 jar (7 ounce) marshmallow creme

Preheat oven to 350 degrees; grease and flour 13x9 inch pan.

Sift together the flour, baking powder and salt.  Set aside.  Cream butter and sugar until light and fluffy.  Add whole egg, egg yolks from other eggs and vanilla.  Beat well.  Add dry ingredients to creamed mixture alternately with milk, mixing well after each addition.  Pour into pan and bake at 350 degrees for 30 minutes.

Cool completely before frosting cake with the chocolate-flavored frosting.  Beat reserved egg whites until soft peaks form.  Gradually add marshmallow creme, beating until stiff peaks form.  Completely cover frosting with meringue.  Bake in preheated 475-degree oven for 3 minutes or until lightly browned.

The Original S'Mores

8 graham crackers broken in half
8 chocolate bars broken in half
8 sticks for roasting marshmallows
16 marshmallows

To make the popular cookie, place piece of chocolate bar on one half of graham cracker.  Put toasted marshmallow on top of chocolate bar to melt the chocolate.  Place other half of cracker on top of marshmallow and enjoy.

Did you know that the name of S'Mores came from the frequent requests of "some more" whenever they were made?  S'Mores has been quite popular at Girl Scout campfire cookouts since the 1920's.
