This side dish is often requested by my husband, Dave. He had found the basic recipe in a newspaper and asked me to make it. I also thought it looked good so I tried it but added some of his favorite seasonings. It is like comfort food that we have enjoyed for more than 40 years.
Ingredients:
2 cups crushed cheese-flavored crackers
1/4 cup butter or margarine, melted
3 large onions, thinly sliced (3 cups)
2 Tbs. butter or margarine
2 large eggs or 1/2 cup liquid egg substitute
1 cup milk
1 tsp. seasoned salt
1/4 tsp. each Italian seasoning, black pepper and garlic powder
1/2 cup shredded cheddar cheese
1 Tbs. butter
Directions:
Preheat oven to 350 degrees Fahrenheit. In small bowl, combine 1 1/2 cups crushed crackers and 1/4 cup melted butter or margarine. Press onto bottom and sides of 9 inch pie plate. Bake for 5 minutes. Cool completely.
Increase oven temperature to 450 degrees Fahrenheit. In large skillet cook onions in 2 tablespoons butter or margarine over low heat for 10 to 15 minutes or until soft, stirring occasionally. Spoon into crust.
In medium bowl whisk together eggs or egg product, milk, salt, Italian seasoning, pepper and garlic powder. Stir in cheese. In same large skillet, melt 1 tablespoon butter or margarine and pour in egg mixture. Cook and stir over very low heat until cheese melts. Pour over onions and sprinkle with remaining crushed crackers. Bake, uncovered, for 5 minutes. Reduce oven temperature to 350 degrees Fahrenheit. Bake for 10 to 15 minutes more or until set.
