Recipes for Beef 'n Chili Mafalda and Chinese Cashew Casserole

Beef 'n Chili Mafalda

Ingredients:
8 ounces lasagna noodles
1 pound ground beef
1/2 cup chopped green pepper
1/4 cup chopped green pepper
1/4 cup chopped onion
1 pound can of tomatoes
1 15-ounce can of tomato sauce
4 teaspoons chili powder
1 teaspoon salt
1/2 teaspoon pepper
1/3 cup grated Parmesan cheese
Buttered bread crumbs

Directions:
Preheat oven to 350 degrees Fahrenheit and grease 2-quart casserole dish or spray with non-stick cooking spray.  Cook lasagna noodles according to directions on package and drain.  In the meantime, brown beef in skillet.  Blend green pepper, onion, tomatoes, tomato sauce, chili powder, salt, pepper and grated cheese in skillet and simmer about 10 minutes.  Cover bottom of greased 2-quart casserole with a thin layer of sauce, then layer lasagna noodles and sauce twice.  Sprinkle with buttered bread crumbs.  Bake at 350 degrees for 40-45 minutes.


Chinese Cashew Casserole

Ingredients:
1-1/2 pound ground beef, browned
Chopped onion to taste
1 cup sliced stuffed green olives
8 ounces egg noodles, cooked and buttered
1/2 pound American cheese (diced or shredded)
1 can cream of mushroom soup
3/4 cup milk
1 small can mushrooms, undrained
Salt and pepper to taste

Directions:
Preheat oven to 350 degrees Fahrenheit.  Grease casserole dish or spray with non-stick cooking spray.  Mix ingredients and place in greased baking dish.  Cover and bake for one hour.  Add Chinese dry noodles and cashews.  Bake uncovered for another 15 minutes.
