Swedish Meat Balls
Ingredients:
1/2 pound ground beef
1/2 pound ground sausage
1/2 cup fine graham cracker crumbs
1 egg
1/8 teaspoon pepper
1 teaspoon nutmeg
1 teaspoon allspice
1 teaspoon ginger
1/2 cup cream
1/4 cup dry bread crumbs
1-1/2 teaspoons salt
1/2 cup water
Directions:
Combine all ingredients except water. Form into balls. Brown slightly in small amount of butter. Add water. Cover; simmer for 30 minutes. Pour into casserole. Bake in preheated 300-degree oven for 1 hour. (Recipe created by Mary Lou Parrott of Upper Marlboro, MD)
Oriental Meat Balls With Rice
Ingredients:
2 slices bread
1 lb. lean ground beef
1 egg
1 tsp. salt
1/2 tsp. ground mustard
1/2 tsp. ground ginger
1/4 tsp. garlic powder
3 Tbsp. cornstarch
1 Tbsp. vegetable oil
1/2 cup sugar
1/2 cup vinegar
1/2 cup soy sauce
1/2 cup dry sherry
3 cups cooked rice
Directions:
Moisten bread with water and squeeze dry. Combine with meat, egg, salt, mustard, ginger and garlic powder; blend well. Form into 1-inch balls. Roll in cornstarch. Brown in oil. Drain off excess fat. Combine sugar, vinegar, soy sauce and wine. Pour over meat balls. Simmer, basting occasionally, about 15 minutes or until sauce thickens and meat balls are glazed. Serve over rice. (Makes 6 servings.)
Danish Meat Balls
Ingredients:
2 lb. ground beef
2 eggs
1 small onion, finely diced
1 cup cracker crumbs
1 tsp. salt
1/2 tsp. pepper
1 can cream of mushroom soup
1/2 cup tomato juice (or 4 Tbsp. catsup and 1/4 cup water)
Directions:
Mix all ingredients together, working well with hands until mixture is of even texture. Form into 1-inch balls and brown on all sides in butter or cooking oil, cooking gently about 25 minutes over low to moderate heat. Remove from pan and drain excess fat. Add soup and 1/2 cup juice or water. Bring to a boil and add meat balls. Simmer in heavy skillet or in casserole in oven for about 15 minutes.
