Yellow Pudding Cake Mix
2 eggs
1/2 cup vegetable oil
2 Tbsp. water
1 cup semi-sweet chocolate chips
1 cup flaked coconut
1 cup chopped walnuts
Preheat oven to 350 degrees. Grease and flour 10x13-inch glass baking pan. Stir together the cake mix, eggs, oil and water. This will make a very thick batter. Add chips, coconut and walnuts. (You can add more or less of these ingredients.) Spread batter evenly in pan. Bake in preheated 350-degree oven for 20-25 minutes until golden brown; will be soft to touch until it has completely cooled. Cut into squares and serve.
Betty's Fabulous Chocolate Chip Bars
1 cup butter or margarine, softened (2 sticks)
1-1/2 cup oatmeal, uncooked)
1/2 cup all-purpose flour
2 eggs
1 cup firmly packed brown sugar
1 teaspoon vanilla
1 cup chopped nuts
1 12-ounce package chocolate chips
Mix together all ingredients except chocolate chips and beat for 3 minutes until light and fluffy. Mix in 1 cup chocolate chips and spread in ungreased 8-inch square microwavable pan. Microwave on high 4 minutes. Turn pan and microwave on high for 4-5 more minutes until top is dry. Take out and sprinkle 1 cup chocolate chips on top and let stand 10 minutes. After they have melted, spread for icing. Cool on countertop 15-20 minutes. Cut into bars and serve.
"Your Own" Granola Bars
3-1/2 cup toasted quick oats
1 cup raisins
1/2 cup chopped nuts
2/3 cup butter or margarine, melted
1/4 cup brown sugar (firmly packed)
1/2 cup honey
1 egg, beaten
1/2 teaspoon vanilla
1/2 teaspoon salt
Spread oats on a cookie sheet and bake in a preheated 350-degree oven for 15-20 minutes or until light golden brown. Combine ingredients and mix well. Place firmly into a well-greased 12-1/2x10-1/2-inch pan. Bake in 350-degree oven for 20 minutes. Cool. Cut into bars. Store in tightly covered container or refrigerator. Makes 30 bars.
