Fresh Apple Cake
Ingredients:
3 large eggs
2 cups sugar
1-1/2 cups vegetable oil
1 teaspoon vanilla
3 cups all-purpose flour
1 teaspoon salt
1 teaspoon soda
1 teaspoon cinnamon
3 cups diced apples
1 cup chopped nuts
Directions:
Preheat oven to 350 degrees. Grease and flour 10-inch tube cake pan or Bundt pan. Beat eggs with sugar until very light and fluffy. Add oil and vanilla. Mix in sifted dry ingredients. Fold in diced apples and nuts. Pour into pan. Bake for 1 hour and 15 minutes, or until cake springs back when lightly touched on top. If desired, cover cooled cake with Brown Sugar Glaze.

Brown Sugar Glaze:
Combine 1 cup firmly packed light brown sugar with 1/2 cup butter or margarine (1 stick) and 1/4 cup milk. Bring ingredients slowly to boil and cook for 2 minutes. Pour over cooled cake.
Apple Nut Cake
Ingredients:
3 cups flour
1 teaspoon soda
1 teaspoon baking powder
1 teaspoon cinnamon
1 teaspoon allspice
1 teaspoon cocoa
1 cup shortening (or 1/2 cup butter and 1/2 cup shortening)
2 cups sugar
2 large eggs
1 cup buttermilk or sour milk
3 medium apples (chopped with peelings on)
1 cup chopped nuts
1/2 cup raisins, if desired
Directions:
Preheat oven to 350 degrees. Grease and flour 10-inch tube cake pan or Bundt pan. Cream shortening and sugar; add eggs and beat well. Add sifted dry ingredients alternately with milk. Fold in apples and nuts. Pour in pan and bake in 350-degree oven. for 1 hour to 1 hour and 15 minutes or until cake springs back when lightly touched with finger. If desired, cover cooled cake with Brown Sugar Glaze.
