Ingredients:
1 pound ground beef
1/2 medium onion, chopped
1/2 green pepper, diced
1-1/2 teaspoons salt, divided
1/2 teaspoon pepper
2 tablespoons butter or margarine
6 medium potatoes (about 2-1/4 pounds),
peeled and finely shredded
3 eggs, beaten
1/3 cup milk
2 cups (8 ounces) shredded cheddar or
mozzarella cheese
Directions:
1. Brown beef with onion, green pepper, 1/2 teaspoon salt and pepper in a 12-inch stove-top or electric skillet over medium heat. Remove meat mixture from skillet and drain fat.
2. Reduce heat to low. Melt butter; spread potatoes over butter and sprinkle with remaining salt. Top with beef mixture.
3. Combine eggs and milk; pour over all. Cook, covered, until potatoes are tender, about 30 minutes.
4. Top with cheese; cover and heat until cheese is melted, about 5 minutes.
5. Cut into wedges or squares to serve. (Makes 4-6 servings.)
Original recipe compiled by Audrey Nolt (Versailles, Missouri) and published in Taste of Home's Family Favorites.
Audrey writes: "Most of our family lives in Pennsylvania. They visit us often, and I like to serve this simple meal when they do. We have 280 sows and raise pigs to feeder size. There's plenty to do and quick meals are appreciated."
