Lighten-Up! Recipe
This traditional dark chocolate and cherry cake is totally guilt free, thanks to lite cherry pie filling, egg whites and a secret ingredient -- prune baby food!
The classic recipe: 520 calories and 25g fat per serving.
Lighten-Up! version: 227 calories and 6g fat per serving.
1 package (18.24 oz.) dark chocolate fudge cake mix
1-1/3 cups water
4 egg whites
1 jar (2.5 oz.) prune baby food
1 can (21 oz.) lite cherry pie filling
1 container (16 oz.) lite frozen whipped topping, thawed
Chocolate sprinkles
Preheat oven to 350ºF. Coat 2 9-inch round cake pans with cooking spray. On medium-high speed, beat cake mix, 1-1/3 cups water, egg whites and baby food until smooth, 2 minutes. Divide between pans. Bake 25-27 minutes or until pick comes out clean. Cool 10 minutes. Transfer from pans to racks; cool completely. Fold 1/2 cup pie filling into 1-1/2 cups topping. Place one layer on plate and spread with cherry mixture. Top with remaining layer. If desired, transfer 1-1/2 cups topping to pastry bag fitted with large star tip; reserve. Frost with remaining topping. Spoon remaining pie filling over cake top to within 1" of edge. Using reserved topping, pipe or spoon border around filling; garnish with sprinkles. Refrigerate until ready to serve. (Makes 16 servings.)
