Breakfast Served for Dinner


When it comes to economical meals, you can't beat breakfast for dinner. Here's some thrifty and delicious ideas to serve breakfast for dinner!

Apple Muffinwich -- Sandwich toasted English muffins with apricot preserves, sliced ham, American cheese and thinly sliced apple. Serve with a mixed green salad.

Tex-Mex Corn Pancakes -- Stir 1 cup corn kernels, 1/2 cup shredded pepper Jack cheese and a pinch of cayenne pepper into 2 cups of pancake batter; cook as usual. Top with guacamole and sour cream; serve with fresh fruit salad.

Savory Pancake Toppers -- Top pancakes (freshly made or frozen) with salsa and sour cream. Sauté onions, mushrooms, peppers and tomatoes for a warm salsa. Heat a can of Cheddar cheese sauce or soup and sprinkle with bacon bits or crumbled sausage. Sauté sliced onions in a small skillet before adding a can of cream of mushroom soup with enough milk to make a creamy sauce.

Salami Scramble -- In large nonstick skillet, fry diced salami until browned. Add beaten eggs and a little paprika; cook and stir until set. Serve with tomato wedges and, if desired, a toasted sesame bagel.

Eggy Tacos -- Fill taco shells with canned refried beans, chopped hard-boiled eggs, taco sauce and shredded Cheddar cheese; heat in the microwave just until cheese melts. Top with shredded lettuce and chopped tomato.

Corned Beef Hash -- In large nonstick skillet, cook chopped onion in butter until tender. Add frozen hash brown potatoes, chopped deli corned beef, additional butter and a dash of Worcestershire sauce; cook until crisp and browned, 15 minutes. Serve with sautéed mixed vegetables.
