Nuts & Honey Salmon -- Quesadillas


This is an easy but elegant recipe for preparing salmon. If you have any leftovers, make the Salmon Quesadillas for another quick and easy meal.

Nuts & Honey Salmon

Ingredients:
¼ cup melted butter
3 Tbsp. whole grain mustard
1½ Tbsp. honey
¼ cup dry bread crumbs
¼ cup walnuts or pecans, finely chopped
4 tsp. fresh parsley, chopped
4 salmon filets (4 ounces each)
1 lime or lemon (optional)

Directions:
1. Preheat oven to 400ºF. Line shallow roasting pan with non-stick aluminum foil, or spray with non-stick pan spray.
2. In small bowl, blend butter, mustard, and honey, set aside. In another bowl, mix together bread crumbs and nuts.
3. Place salmon filets on prepared pan, sprinkle with salt and pepper, and brush with honey-mustard mixture; sprinkle tops with crumb/nut mixture. If any remains, press into sides of salmon.
4. Bake salmon 12-15 minutes in preheated oven or until it flakes easily with a fork, serve with lime or lemon wedges.

Salmon Quesadillas

Ingredients:
2 garlic cloves, minced
1 tsp. vegetable oil
8 oz. salmon
2 tsp. dried basil
1 Tbsp. softened butter
4 flour tortillas (8-inch)
2 cups mozzarella, shredded

Directions:
1. In pan, sautè garlic in oil until tender, then stir in basil, pepper and salmon.
2. Cook over medium heat.
3. Spread butter on one side of each tortilla and place on griddle butter side down. Sprinkle each with ½ cup cheese.
4. After cheese has melted, spread ½ cup salmon mixture over half of each tortilla.
5. Fold over and cook on low for a couple of minutes on each side. Cut into wedges.
