Pork Tenderloin With Butternut Squash in a Slow Cooker

Ingredients:
3 pounds butternut squash, peeled and cut into 2-inch pieces
(6 cups)
½ teaspoon salt
1 pork tenderloin (2 pounds)
¼ cup orange marmalade
2 cloves garlic, finely chopped
Directions:
1. Arrange squash around edge in 3- to 4-quart slow cooker. Sprinkle with salt. Place pork in slow cooker (it will overlap squash slightly). Mix marmalade and garlic; spread evenly over pork.
2. Cover and cook on low heat setting 7 to 8 hours.
3. Remove pork from cooker; place on cutting board. Cut pork into slices; serve with squash.
(Makes 6 servings.)
Tips: Success Hint -- If you have time, brown the pork in oil on all sides before placing in the slow cooker. Browning adds color and a deeper flavor.
Health Twist -- Watching your salt intake? Omit the salt and season with pepper.
Variation -- Try another flavor of marmalade, such as pineapple.
Special Touch -- This is a great recipe to serve for entertaining. Fan pork slices in a circular pattern on a platter, and spoon squash in the center. Drizzle remaining juices over pork, and garnish with slices of fresh orange.
