Fun Recipes to Share

There are many fun recipes to share. The "fun" can be for any number of reasons. It may be that a cookie is cut out in a clever way. It may be that the rolls have colored decorations. Or, it may be that the recipe is a low calorie, low carb one which makes it "fun" to share because one knows one can eat it without anxiety about gaining those few extra pounds.

The web site of the following "Lowfat Sun-Dried Tomato and Garlic Chicken" recipe is www.favoriterecipestoshare.com/low.html. One serving has 210 calories. It was submitted to the web-site by Marla Hudgins.

4 boneless, skinless chicken breasts; 15-18 garlic cloves; 1 onion sliced; 1 green pepper sliced; 1/2 cup sun-dried tomatoes (not packed in oil) chopped; 1/4 cup white wine; 1/2 cup chicken broth; 1 teaspoon dried oregano; 1/4 teaspoon ground black pepper.

Cut off all visible fat from the chicken breasts. Coat a skillet with nonfat nonstick cooking spray then preheat over medium heat. Mince the garlic cloves and place them in the skillet around the chicken. Cook the chicken for two to four minutes on each side. Remove chicken from the skillet.

Lay the onions, green peppers, and tomatoes over the garlic cloves in a 9 x 13 inch baking pan. Arrange the chicken over the tomatoes, onions, green peppers, and garlic. Pour wine and broth over the mixture and sprinkle with oregano and pepper. Cover and bake at 350 degrees for 25-30 minutes. This recipe makes four servings.
