Southwestern Pork Stew in a Slow Cooker

Use the slow cooker to make Southwestern Pork Stew. Simmered slow and long, this low-fat pork stew has a subtle kick.
Ingredients:
1 medium onion, chopped (½ cup)
3 large cloves garlic, finely chopped
2 pounds pork boneless shoulder, trimmed of fat and cut into 1½-inch pieces
¼ cup cornmeal
2 teaspoons ground cumin
½ teaspoon dried oregano leaves
½ teaspoon salt
1 can (15 to 16 ounces) chili beans in sauce, undrained
1 can (14½ ounces) diced tomatoes and mild chilies, undrained
1 cup chicken broth
2 cups whole kernel corn
Directions:
1. Place onion and garlic in 3½- to 4-quart slow cooker. Top with pork. Mix cornmeal, cumin, oregano and salt; sprinkle over pork and mix well. Add beans, tomatoes and broth; mix well.
2. Cover and cook on low heat setting 8 to 10 hours.
3. Stir in corn. Cover and cook on low heat setting about 30 minutes or until corn is tender.
(Makes 6 servings.)
Success Hint: The cornmeal in this stew provides a unique taste and acts as a thickener.
Serve-With: Warm flour or corn tortillas, and serve them with this flavorful stew. Place a basket of oranges or other fruit on the table for diners.
