Maple-Nut Rice Pudding with Apples

This recipe for Maple-Nut Rice Pudding with Apples is a lighter version of a creamy rice pudding and with just 4 grams of fat per serving, it is certainly fabulous and figure-friendly!
Ingredients:
2-1/2 cups low-fat (1%) milk
3/4 cup uncooked rice
1/3 cup + 1 Tbs. sugar
1/4 tsp. salt
1/4 tsp. maple extract
1 Tbs.butter
2 Gala apples, cored, each cut into 12 wedges
1/2 tsp. ground cinnamon
1-1/4 cups thawed frozen fat-free whipped topping
2 Tbs. toasted sliced almonds
Directions:
In medium pot, combine 2 cups milk, rice and 1/2 cup water; over medium-high heat, bring to boil. Reduce heat to low. Cover; cook until rice is tender and most of liquid is absorbed, 30-35 minutes. Stir in 1/3 cup sugar, salt, extract and remaining 1/2 cup milk; cook, stirring, until sugar is dissolved and mixture is thickened. Remove from heat. Meanwhile, in large nonstick skillet, melt butter over medium-high heat. Stir in apples, cinnamon and remaining 1 Tbs. sugar. Cook stirring occasionally, until softened, 3-5 minutes. Evenly divide rice pudding among 6 dessert dishes. Top with apples, whipped topping and almonds.
