This recipe for Nice Rice Pie
will make a healthy low-calorie entrée that will be such a hit with everyone!
Ingredients:
1 teaspoon vegetable oil
6 ounces fresh mushrooms, sliced
1 cup basic brown rice (precooked)
2 eggs (1 yolk only), beaten
½ cup low-fat cottage cheese
½ cup part-skim ricotta cheese
¼ cup grated Parmesan or sapsago cheese
½ cup grated part-skim mozzarella cheese (or any low-fat mild cheese)
1 cup Swiss chard, spinach, kale, or a combination, steamed and chopped
Directions:
1.
Heat vegetable oil in a nonstick skillet and sauté the mushrooms. Drain.
2. Coat an 8-inch pie pan with vegetable oil spray and press cooked rice into pan to form a crust.
3.
Mix the remaining ingredients together to blend and spoon over the rice.
4. Bake uncovered in a preheated 350ºF oven for 15 minutes.
(Makes 6 servings.)
