Pork Loin with Red Onions in Slow Cooker

Use the slow cooker to make this amazing Pork Roast
-- an easy way to turn an ordinary pork loin into a gourmet meal with amazing ease!
Ingredients:
3 large red onions, thinly sliced
1 cup pearl onions, blanched and peeled
2 tablespoons unsalted butter or margarine
2½ pounds boneless pork loin, tied
½ teaspoon salt
½ teaspoon freshly ground black pepper
½ cup cooking sherry
2 tablespoons fresh chopped Italian parsley
1½ tablespoons cornstarch
2 tablespoons water
Directions:

Cook red and pearl onions in butter in medium skillet over medium heat until soft.

Rub pork loin with salt and pepper and place in slow cooker. Add cooked onons, sherry and parsley. Cover; cook on LOW 8 to 10 hours or on HIGH for 5 to 6 hours.
3.
Remove pork loin; cover and let stand 15 minutes before slicing.
4. Combine cornstarch and water and stir into cooking liquid in slow cooker. Serve sliced pork loin with onions and sherry sauce.
