Baking Dutch Letters

Those without connection to the Dutch or to Iowa may not know about Dutch Letters. But, there's a blog (http://www.bakerscommunity.com/blog/2009/10/31/baking-dutch-letters.html) that gives all the scoop about Dutch Letters.

According to this blog, they are a cookie. But they are more than that; they are flaky, buttery and filled with an almond paste and shaped into a letter. Actually, they are a cross between a pastry and a cookie and were made only around Christmas time.
