I found some wonderful recipe cards in the March 3, 2010 issue of the Woman's Day magazine. These four recipes are printed on a page of cardstock that can be conveniently cut out and placed in your recipe file. I have copied them here to entice you. Do try Turkey Panini -- this version of an Italian grilled sandwich for a quick and easy meal. What could be better than a hot, grilled sandwich!
Ingredients:
8 1/2-inch-thick slices from round country white or sourdough bread
1/4 cup bottled mango chutney
8 oz sliced turkey breast
1 small red onion, sliced
1 jar (12 oz) roasted red peppers, drained
4 oz sliced Jarlsberg cheese
Directions:
1. Coat a stovetop ridged grill pan or large nonstick skillet with nonstick cooking spray heat over medium-high.
2. Meanwhile, assemble panini: Lay slices of bread on cutting board. Spread 4 slices bread with 1 Tbsp chutney each.
3. Top remaining 4 slices bread with the turkey, onion, roasted peppers and cheese. Cover with other slices, chutney side down.
4. Cook 4 to 5 minutes, turning once halfway through. Press down with a spatula firmly and often.

Notes from Betty: Panini is an Italian sandwich usually made with vegetables, cheese, and grilled or cured meat. Jarlsberg is a mild cow's-milk cheese with large irregular holes or what are commonly referred to as "eyes", originating from Jarlsberg, Norway. Jarlsberg has a yellow-wax rind and a semi-firm yellow interior. The flavor is mild, buttery, nutty and slightly sweet. It is an all-purpose cheese, good both for cooking and for eating as a snack. It has a characteristic smooth, shiny-yellow body, and a creamy supple texture.
